Light and lovely late Summer Salad

Ingredients

  • 6 Cups Baby Spinach Packed cup measures
  • 1 apple Sliced in thin wedges
  • 1 pear Sliced in thin wedges
  • 1/2 Cup Feta Cheese crumbled
  • 1/2 Cup Pecans
  • 1 TB Chinook Honey
  • 2 TB lemon juice
  • 1 TB balsamic vinegar
  • 1/4 Cup olive oil
  • 1 Tsp Fresh Ginger finely minced-Tip freeze your extra ginger to grate in another recipe
  • Salt & Pepper to taste

Instructions

  1. Assemble the salad ingredients and toss lightly to combine in a large bowl
  2. Prepare vinagrette by whisking together all the ingredients. Drizzle over the salad and toss lightly or serve dressing separately if desired.
