Moist and full of chocolatey goodness!

Ingredients

  • 1/3 Cup Alberta Multifloral Honey
  • 2 Large Eggs
  • 1/2 Cup Vegetable Oil
  • 1/2 Cup Brown Sugar
  • 1 Tsp Vanilla
  • 1 Tsp Salt
  • 1/2 Tsp Baking Soda
  • 1/2 Tsp Baking Powder
  • 1/2 Tsp Expresso powder
  • 1/3 Cup Cocoa Powder
  • 1 2/3 Cup All Purpose Flour
  • 2 Cups grated Zucchini
  • 1 Cup Chocolate Chips

Instructions

  1. Preheat your oven to 350 F. Lightly grease a loaf pan
  2. Prepare the grated zucchini
  3. In a large bowl combine the eggs, honey, oil, and vanilla. Mix until smooth.
  4. Mix dry ingredients (flour, baking soda, baking powder, cocoa, expresso powder) in a separate bowl . Then mix into wet ingredients.
  5. Mix in zucchini and chocolate chips to wet ingredients bowl. Do not overmix
  6. Pour the batter into the loaf pan
  7. Bake for 65-75 minutes or until a toothpick inserted into the centre comes out clean.
  8. Let cool after baking for 10-15 minutes before turning out of the pan.

Tips

after grating the Zucchini press gently to remove some moisture in a strainer
